You can imagine how pungent and aromatic oil of cumin
is. Yet, that is why it is such a valuable substance.
Its aroma is due to its high content of special substances
known as aldehydes. Specifically, cumin is rich in cuminaldhehyde,
and that is why it is so powerful.
Cumin has been used medicinally for thousands of years
and was a favorite natural remedy for the ancients;
it is mentioned at least twice in the Bible. Now it
is known that cumin, and, particularly, oil of cumin,
is one of the most powerful of all antioxidants. When
researchers matched oil of cumin against all known anti-oxidants,
it totally defeated all of them. Cumin oil greatly increased
the ability of the body to fight toxicity by increasing
the synthesis of a critical enzyme called glutathione
peroxidase. One study found that this anti-toxic action
was increased within the organs by up to 700%.
Since antiquity cumin has been respected as a digestive
aid. Now we know that this effect is due to its
valuable actions on the digestive organs, particularly
the liver and pancreas. One study found that oil of
cumin increased the liver's
output of bile, which is so critical for the digestion,
by as much as 300%. That is an enormous increase. Another
